New restaurant in Bawtry is committed to only buying local produce

Why buy cheese from France when you can buy it from Yorkshire? That’s the message from one Doncaster business that is cutting down on food miles and supporting local traders.

Ashley Ryan is the head chef at Brother’s and it was his decision that they should source their ingredients locally.

He said: “I decided to be a chef here because I can actually make a difference, have a say over the menu.

“Which for a chef is quite a rare opportunity.”

They buy fruit, vegetables, and salad from Doncaster market and have a wide range of stockists across Yorkshire.

Their coffee is from Sheffield and their dry-aged beef comes from within a 50-mile radius.

Ashley said: “It’s all about keeping money in the local area - we have some phenomenal produce in Yorkshire.”

Ashley is passionate about his produce being fresh and therefore has a rule that he only freezes three things in his kitchen - ice cream, bread, and peas.

“Our menu is quite a classic menu with some modern touches,” he continued.

“At its heart, it’s good homely food that you just want to bring your family down to and eat.

Ashely says that some of the stand out items on his menu include a whole lobster by pre-order only and a 10oz dry-aged inch thick cut ribeye steak.

“I love being a chef because I get to make everyone in my restaurant smile simultaneously and in no other job can you make 30 - 60 people smile every couple of hours,” Ashley continued.

Owner and manager Nathan Joseph said: “We decided to open as it has been a big dream of me and my brother for years.

“I think what makes us special and different is the fact that pretty much everything we do is fresh and locally sourced.

“We use a local butcher called Price and Fratwell and get our seafood direct from Grimsby every morning.

“We try to find everything as local as possible - we don’t use cheeses from France we use local cheese suppliers.”

Brother’s have started serving fish and chips on Friday from 4pm to fill a gap in the local market as the local chippy shut down recently.
